They are very early harvested olives, rich in aromas and complex flavors. In order to create these wonderful flavors we use different and innovative techniques.

To avoid oxidation they conserve oils with nitrogen
Olive stones used to produce energy thereby making the mill sustainable
Cold extraction no higher than 20ºC (69ºF)

Pairs well with fish, for all kind of salads and dressings (like mayonnaise or vinaigrettes), very recommendable for desserts (marble cakes or vanilla ice cream).
