Abbaye de Belloc is a raw sheep's milk cheese from the Pays Basque region of Aquitaine, France where it has been made using the same process for 3000 years. Named for the Monastery of Notre-Dame de Belloc, where Benedictine monks made this cheese for hundreds of years.
The paste is dense and rich with notes of burnt caramel near the rind, which is crusty brown with red, orange and yellow spots. Abbaye de Belloc is aged from 6 weeks to 6 months and exhibits a smooth lanolin finish.
