Mimolette

This stately cheese was commissioned by King Louis XIV! During the War of Devolution, France was at odds with the Netherlands, but the French people were still in love with Dutch cheeses like Edam and Gouda. King Louis XIV decreed that French cheesemakers should make a rival cheese that would “shine like gold” in the marketplace and put the Dutch cheeses to shame. Thus Mimolette was born! Since then, Mimolette has been a symbol of French national pride, and was rumored to be the favorite cheese of President Charles de Gaulle.
Mimolette has notes of salted caramel and butterscotch. Its dense texture gets more crystalline the longer it ages. The craggy outer rind comes from the careful inoculation of cheese mites; called “tiny affineurs” by the French. The mites aerate the outside rind, allowing the cheese to dry and ripen properly. The vibrant color comes from the addition of annatto, which are the dried seeds of the South American achiote tree.
