Leonora is the brainchild of cheesemaker Oscar Fernando Marcos Gonzales. Oscar is part of a younger generation of Spanish cheesemakers looking to resurrect and replicate ancestral techniques lost in World War II.
Leonora gets its ‘fuego’ by being coated with Spanish Pimentón de la Vera before growing its fluffy outer rind. The flavor comes in phases, starting off bright with a lemony sour cream tang, then descending through earthiness and ending in the rich smokey warmth of the pimentón.
Firm and fudgy, this cheese is a stand out on boards, and a conversation starter at parties.
