JANUARY 22nd: What's in a Name? Exploring Name Protected Cheeses
About this item
Cheese is a cultural touchstone for many European communities. These communities seek to preserve the cultural integrity of their products and must employ a Consortium (a shadowy cheese law organization) to do so. As an American consumer, it can be confusing to sort through all the seals of authentication (PDOs, PGIs, AOPs, and more), but we're here to break it down for you!
This is a class for the curd nerds. We'll be going down to brass tacks on the breeds, methods, and geographical boundaries that can make or break a cheese.
This class will feature a flight of 5 cheeses with a wine pairing for each one.
