Harbison is a spruce wrapped beauty from Jasper Hill Farms. The bloomy rind cheese is wrapped in a spruce bark girdle, which stabilizes and flavors the cheese as it ages. The structure of the bark allows the cheesemakers to age Harbison to full gooey glory without fear of it collapsing in on itself. The spruce bark also serves as a home for a variety of microflora, and should have a peppering of blue mold. 

 Harbison is rich, with notes of woodsy mushrooms and buttered corn. To serve, simply let it come to room temperature, chop the top off, and scoop out the custardy center! Use as a centerpiece for any cheese and charcuterie board, or pop under the broiler till bubbly and slather on crusty bread.
