It's a pasteurized, bloomy rind, spruce bark wrapped cow's milk cheese from Jasper Hill Farm in Vermont. The flavors are creamy, floral, woodsy, with notes of Dijon mustard. The texture is silky ooey-gooey. Its brighter and fruitier when its young, and more earthy and mushroomy when its a bit older. This is a special one!
