Fra' Mani's take on a traditional American Genoa salami makes a few improvements. They use 100% of prime cuts of pork instead of a beef and pork blend. The salami is then seasoned with a delicate spice blend that ends in a subtle note of nutmeg. Pair with honey, walnuts, and double cream Gorgonzola!  

Fra' Mani is a Berkly-based salumi producer, started by Chef Paul Bertolli. Fra' Mani sources their meat from the top 3% of pork produced in the United States. The hogs are pasture raised on small family-owned farms. There's no confinement, no growth hormones, and no antibiotics. It's a difference you can taste!
