New cheesemaker Haro Cheese recently started making raw cows milk cheese in Bertram, Texas. Inspired by Manchego, Eldo has a natural rind that is rubbed with vegetable ash, giving it a black rind. Tangy and smooth and lightly citrusy, Eldo is a lovely snacking cheese to enjoy with a crisp white wine or fruity red.
