Dirt Lover is a bloomy-rind cheese, reminiscent of a sheep's milk brie, but oh-so-delicate. The interior is bouncy and mild like fresh curd, and yields to a gooey edge and finally an earthy-velvet rind. The rind has been lightly dusted with vegetable ash to create a striking contrast with the rest of the cheese. It reminds us of rustic living and transports us straight from New Orleans to a Missouri farm.
