Buttery, rich and nutty, with moderated tyrosine crystals, this cheese is aged behind the Bovbjerg Lighthouse in Denmark.  Fresh sea air is purposefully circulated throughout the aging facility ensuring the cheeses are weathered in the salty sea air, giving this medium firm cheese a bright, clean flavor.  Great for snacking or using in mac and cheese.
