It's carnival time! To celebrate the spirit of Mardi Gras we are partnering with local libations company: El Guapo Bitters! This custom Willoughby is washed in El Guapo's Cuban Bitters, which is a Caribbean style blend that features sour orange, coriander, lime and cinnamon. 

The wash is lovingly applied by our friends at Jasper Hill Farm, building layers of flavor as it ages for about 6 weeks. The finished cheese retains the coriander note; but also develops a deep profile of toasted peanut and a hint of dark cocoa powder.
