Made in Eastern France in the cooperative dairies, named fruitières, of the Jura Mountains and aged in the renowned caves of Rivoire-Jacquemin. The Rivoire family, going back 5 generations, along with 400 milk producers, 25 fruitieres, 3 head cellarmen successfully produce 110,000 Comté wheels for worldwide distribution every year. Comtè is a hard, pressed, cooked, cow's milk cheese made usingraw cow's milk made from the Montbéliarde breed. It has similarities to Gruyere, with very deep, complex, long lasting flavor; always creamy, buttery, with notes of hazelnut. Aged 12 months.
