Comte Parme du Doubs or Saut du Doubs is a wonderful Comte aged by Seignemartin, a third-generation family Affineur located near Nantua.  Selecting the young wheels from 15 different fruitieres around Doubs, Seignemartin chooses only those made with summer milk to achieve the sweet and grassy flavor found in this Comte.  Aged 15-22 months to develop its full potential before shipping them to us, these wheels have a characteristic caramelized onion note and a pleasant crunch.  Named after a famously beautiful waterfall running down a nearby mountain, this Comte is sure to delight!
