Asher Blue, from Sweet Grass Dairy in Thomasville Georgia, is a strong firm blue cheese. Sweet Grass Dairy uses all pasture fed Jersey cow's milk for their cheeses, resulting in beautiful robust natural flavors and vibrant coloration. Asher blue is fairly strong and tangy but not particularly salty relative to other blue cheeses. The texture is firm and crumbly right out of the fridge, but it will soften nicely after a short spell at room temp.
