Tuan has worked in restaurants and food trucks for over 15 years, but this is his first foray into cheese. Truth be told, Tuan was lactose intolerant when he started at St. James, but he’s determined to change that through diligent snacking. Tuan works the Wholesale route, ferrying precious dairy cargo to restaurants all around New Orleans. He loves having the opportunity to network with the NOLA food community.
