Withersbrook Blue

Withersbrook Blue is named for a local forest brook that winds along Jasper Hill’s creamery and pastureland. It spends 60 days maturing in the Jasper Hill Cellars before being sealed in a cheese pouch with a heathy dose of Eden Ice Cider. Ice cider is stored outside and allowed to freeze during the winter in Vermont. As the cider thaws in spring, the juice’s sugars are released, leaving water behind to concentrate the apple’s essence.
Withersbrook shines as an after dinner dessert blue, with notes of apple butter and rum cake. The finish is clean and lightly savory, and would be lovely crumbled over rosemary raisin pork chops.
