Mateo and Andy Kehler have been producing cheese for less than a decade, but the complexity and sophistication of their products speaks to the incredible amount of research and training they have undergone as they strive to perfect their cheeses.

This seasonal cheese is available from mid winter through the spring, but is always worth waiting for. The slight variability in this cheese from season to season always leaves one excited for the cheese to become available. Like their other cheeses, this beer washed cheese reflects well on their European training.

 The cheese has a sweet sort of pungency but also hints of wet stone. The full sweet flavor has an almost bacon like smokiness to it. The texture of the pate is so perfectly velvety one hardly notices the soft rind.

Delicious with sweet beers or cider, this cheese presents very well on lightly toasted French bread rounds.
