Willoughby was originally a creation of Ploughgate Creamery, but production stopped after a creamery fire in 2010. With Ploughgate’s blessing, Jasper Hill has been able to carry on this delicious little washed rind.
Willoughby is aged between 5-8 weeks, while being washed with brine to develop its rosy outer rind. Jasper Hill has created some custom batches for St. James, using local NOLA beer or cider in the brine! Keep an eye out for the next new batch!
The texture shifts as the cheese continues to ripen: from pudgy, to pudding, to gooey. The funk is mild to medium strength, with notes of roasted corn, salted butter, and chicken bouillon.
