Cheddar has been made at Westcombe Farm since the late 19th century. Westcombe Farm takes special care to monitor pasture grass diversity and soil health. With each milking season they are committed to returning nutrients to the soil. Wheels are bound in lard and cloth and cellar aged for 12-18 months. The base cheddar's flavor is intensely earthy and green, with notes of kale, dashi broth and horseradish.

The cheddar is then smoked for 48 hours over beechwood, giving the cheese a beautiful golden color. This deepens the cheddar's savory profile and adds a distinct toasty undernote. Perfect on burgers or micro planed over grilled shishito peppers!
