Fougerus

Fougerus is a newer member of the bloomy rind family, created in the 1960s by Robert Rouzaire. Fougerus translates roughly to "ferns" in French, referencing how the cheese is made. After it develops its outer layer of snowy white mold, Fougerus is layered with dried fern leaves to age. This lends an earthy, woodsiness to the cheese.
