Tomme de la Chataigneraie is a goat's milk cheese from the Auvergne region of France. "Chataigne" translates to chestnut, which is integral to this cheese. The goats forage through local chestnut groves when grazing, giving the cheese a distinctive, nutty taste. The cheese is then aged on chestnut leaves, which leave a yellow tint on the rind.  

The paste has a fudgy, semi firm texture. The flavor is delicate and nuanced, with notes of toasted nuts, upturned earth, and cultured yogurt.
