Thomasville Tomme is named for its hometown in southern Georgia. Tommes are French farmhouse styles that originated as a way to make ends meet. French farm wives would split their milk into cream and skim milk and get two products instead of one. The cream could be turned into butter and sold for income, while the skim milk would be turned into cheese to feed the family. Thomasville Tomme is only part skim, the extra butterfat giving it a silkier mouthfeel.
Thomasville Tomme comes from Sweet Grass Dairy, which practices rotational grazing to ensure that their herd is eating fresh grass 365 days a year. The herd is moved to a new pasture every 12 hours, with a pivot water system following along to keep the herd cool in the southern heat. This system prioritizes soil and animal health, and as a result, cows in the Sweet Grass herd live 3 to 4 times longer than the industry average.
Thomasville Tomme is sharp and herbaceous, with notes of fresh grass, upturned earth, and a hint of eggy custard. It’s incredibly versatile, great for both cheese boards and cooking. Grate into biscuits and quiche, or fold into pimento cheese!
