Kris Lloyd is an award winning cheesemaker who’s been at the helm of Woodside Cheese since 1999. Although cheese might not be native to the Outback, Kris has made it a mission to highlight indigenous Australian ingredients in her products. This includes flavors like smoked bush tomatoes, lemon myrtle, mountain pepper leaf,and local edible flowers. The feta is hand packed into jars, seasoned, and allowed to marinate for 12 days before heading out for sale.
Buffalo milk is decadent, with 11% more protein and 113% more fat than cow’s milk. Silky and shmearable, this cheese is perfect as an appetizer with hot bread and crudité or as part of a more elaborate bruschetta. Be sure to save the oil! It can be used for toasting crostini, tossing in pasta, or even dressing salads!
