In Switzerland, ghouls, witches, and spooky costumes are associated more with the Carnival season than the harvest. Red Witch was originally intended to be sold in Switzerland for Fastnacht (their Mardi Gras celebration). However, it's become very popular in the United States to sell for Halloween!
Red Witch, or Rote Hexe, is perfect for folks who have a more savory palate in this season of treats. Styled after a traditional Appenzeller, Red Witch is smooth and brothy, with notes of caramelized onion and chicken bouillon. The outside rind is patted down with paprika to imitate the bright costumes worn for Carnival season. This cheese is incredibly flexible and can be paired with sweet or savory accompaniments.
