Sardinia is the sheep's milk capital of Italy, with around 3 million sheep inhabiting the island. That's two sheep for every person!
The word 'pecorino' simply means the cheese is Italian and made with sheep's milk. This 'pepato' or 'peppered' pecorino, is studded with spicy black peppercorns. This is a must have for giving your cacio e pepe an extra peppery bite! It also serves as an excellent anti-pasto cheese. Aged for 6 months.
