This firm, pasteurized goat’s milk cheese is aged a minimum of six months. The pale ivory paste is dense and firm, covered in an elegant black wax. Midnight Moon has a bright taste, reminiscent of burnt caramel with the occasional flavor crystal of an aged gouda. Produced in the Netherlands for Cypress Grove Chevre. The cheese’s creaminess pairs deliciously with a light fruit paste, and many wines such as rosé and Cabernet Sauvignon.
