Mandala is the first raw milk cheese to be produced in the country of Brazil. It is made with raw milk from 'Girsey' cows, a hybrid of the heat-tolerant Indian Gir Zebu and buttery-rich Jersey that is crossbred to thrive on tropical pasture. The herd is unique in that the calves are never separated from their mothers, nursing alongside the milking machines.
The Mineiro family has been farming just outside of Sao Paulo for three generations. They modeled Mandala after pressed curd cheeses like Tomme de Savoie and Ossau Iraty. The cheese is fudgy and smooth with notes of pastry crust, tropical fruit, and caramel. Approachable and unique, perfect for a cheeseboard or melting.
