Losada Natural Cornicabra Olives

Cornicabra olives are traditionally harvested to be pressed for their oil, but their vibrant flavor makes them excellent for snacking too. Cornicabras have a bitter-bright citrus note, akin to lemon or grapefruit peel. They're excellent marinated, or served alongside seafood or tapas. The name, meaning "goat horn" refers to their oval shape with a pointed end.
For over 50 years, Aceitunas Losada has produced table olives in Carmona, Spain, near Seville. The family-owned company controls the entire process from hand-harvest in their groves to curing. The current generation owners are siblings, Luis, and Maria Losada, who have focused on resurrecting forgotten olive varieties and returning to traditional natural curing methods.
