From the mind of cheesemaker Michael Hanke, Le Romarino highlights the freshness of wild Alpine herbs. The cheese is aged between 30-50 days.
The interior paste is soft and pudding-y, with a natural sweetness from the milk. The outer rind is encrusted with herbs, including savory, lavender, rosemary, marjoram, anise, basil, and thyme.
The resulting cheese is intensely floral and aromatic. Delicious with honey or apricot preserve, or melted onto a flatbread with seasonal veggies.
