L'Amuse Signature Gouda is a textbook example of what Dutch gouda should taste like. The milk is sourced from Northern Holland, where the cows graze in fields of rich sea clay. The grass retains some sea salt from the clay bed, pre-seasoning the milk for cheesemaking. 

From there, wheels are hand selected and matured under the watchful eye of Betty Koster, cheesemonger and affineur extraordinaire. Betty walks a fine line, aging her cheeses at a slightly higher temperature than the industry norm to lock in moisture and establish the perfect texture. 

The resulting cheese is a deep amber color, with crunchy tyrosine crystals scattered through each dense, toothsome bite. L'Amuse Signature has notes of toasted hazelnuts and salted caramel. This is the perfect party cheese, deep and complex enough to wow the cheese connoisseur, yet approachable enough for the cheese novice.
