Idiazabal

Iziazabal is an ancient sheep's milk cheese that comes from the Basque mountains of Spain. The shepherds who originally made the cheese from their flocks would store it in the rafters of their huts over the summer and the cheese took on a wood-smoke flavor from the fires. It is a hard and chewy cheese with a copper colored rind, lightly smoked with Beech wood, adding a caramel sweetness to the ewe's milk.
