Humboldt Fog is one of the most iconic examples of American artisan cheese. Known for it's striking appearance, Humboldt Fog features a fluffy white outer rind, crumbly center, and gooey outer creamline. The stark black inner stripe is often mistaken for blue mold, but is actually vegetable ash. The technique of ash-ripened goat cheese traces back to the Loire Valley in France, where it was used to repel unwanted microbes.
Cypress Grove Creamery was founded by self proclaimed hippie and single mother of four, Mary Keehn. Mary started goat farming in the 1970s, wanting to provide food for her kids that wasn't Shake N' Bake or Hamburger Helper. She founded the creamery in 1984, and described visions coming to her in her dreams of a velvety, ash ripened goat cheese that would become her best selling Humboldt Fog.
Humboldt Fog is certainly a dream come true, citrus-forward, peppery, and fresh. With notes of tangy buttermilk and fresh herbs. For an unforgettable treat: top with turbinado sugar, brûlée, and serve with lemon curd and oat biscuits.
