At Hook's Cheese Company, Inc. they age their cheese in curing caves at just the right temperature and humidity for a slow curing process that allows the cheeses to age to perfection. Every few months each batch is taste tested to ensure that only the cheeses of the highest quality are saved to age. This is evident in the aged cheddars, which they release at multiple intervals:

  • 3 Year: Medium sharpness, not too acidic. Great for slicing and melting.
  • 5 Year: A customer favorite! Sharp, bright, acidic, perfect on cheese boards.
  • 7 Year: Sharpness has peaked and begun to mellow, more tyrosine crystals in this cheese.
  • 10 Year : ACS first place winner! Layered sharpness and creaminess.

Tony and Julie Hook are college sweethearts who have been making cheese together since 1976. They produce award winning block cheddar, blue cheese, and Colby. Tony and Julie have expanded the family business to include Tony's sister and their nephews, who will carry on the next generation of Hook's cheese.
