Grana Padano
About this item
Grana Padano is made throughout the Po River Valley in north Italy, dating back to the 12th century.
Produced from partially skimmed raw cows' milk, Grana Padano is cooked twice and bathed in brine before it is left to age. The resulting rind is firm, protecting a fragrant, dry, flaking paste with sweet, nutty flavor that is never tangy. Grana Padano can be aged anywhere from 6 to 20 months (this one is 12 months old).
Grana means ''grainy'' and, as the name implies, the cheese has a fine granular quality with a sweet, nutty little bite. Grana Padano does equally well served on a cheese board—ideally accompanied by something sweet, like dates, figs, or a dab of good honey—as it is shaved over pasta and salads.
