Translating to "Spring Cheese", Frühlingskäse is a healthy dose of Swiss mountain sunshine. Alpine communities have long believed that the best milk for cheesemaking happens in the spring and summer time. Cows are led to pasture at the foothills of the mountain, migrating higher and higher as the snow melts to chase the first blush of spring grass. This particular wheel is extra-aged for four years, forming dozens of crunchy tyrosine crystals.
Frühlingskäse is made by Jumi Cheese, a family owned dairy that has been making cheese for 5 generations. Jumi works with local dairy farms in the the Emmental region to source premium raw milk. Farmers are encouraged to prioritize their herd's wellbeing over pure production. Jumi awards bonuses based on milk quality, not quantity.
Frühlingskäse is rich and deep, with notes of dark cherry and cocoa powder. Excellent for after dinner drinks or added to a fondue blend.
