Fleur de Maquis is also called Brin D’Amour or “breath of love”. This semi-soft sheep's milk beauty hails from the island of Corsica. ‘Maquis’ is the local term for the thickets of scrubby underbrush on the island. These thickets served as hide outs for Napoleonic guerilla fighters, pirates, and highway robbers over the centuries. But they are also chock full of wild herbs and grasses for grazing: rosemary, marjoram, savory, juniper, and more.
Cheesemakers honor these fertile grazing grounds by taking the same herbs that the sheep consume and packing them on the outside of the cheese.
When young, Fleur de Maquis is firm and bouncy with a light citrus tang. As it ages, a blue-grey mold begins to develop through the rind. The texture becomes supple and custardy- with savory and herbaceous notes emerging.
This is the textbook "ugly but delicious!" cheese.
