Fishwife: Albacore Tuna in Olive Oil

Fishwife sources their albacore tuna from the Bay of Biscay in Galacia, Spain. The fish is pole-and-line caught by small boat fishermen, and packed by hand in 100% Spanish olive oil. The cannery has been in operation since 1869, refining its artisanal process over the centuries.

This is an ode to the Spanish art of 'conservas:' high quality preserved goods like olives, peppers, and of course, seafood.
