Cottonseed pays homage to the mixed milk robiolas of Piemonte. Mixed milk cheeses play to the strengths of both animals: the bright acidity and savory nuttiness from the goat's milk is balanced by the subtle sweetness and round butteriness from the cow's milk. Mild and squidgy, it is the perfect gateway for folks trying goat's milk cheese for the first time. 

Boxcarr Handmade Cheese was founded in 2009 by sister and brother, Samantha and Austin Genke. They started with heirloom produce, heritage pigs, and pastured poultry, working the land while Austin's wife Dani expanded and managed their dairy goat herd. In 2015 the creamery was built and Samantha led the charge to develop soft ripened cheeses. Their lineup is inspired by the smaller farmstead cheeses of Northern Italy. All goat milk is sourced from their own herd.
