A traditional mountain cheese from the Bregenzerwald in Sibratsgfäll, Austria. Seventeen farmers in the mountain forest pool their milk together to create this single cheese. Many of the farmers do this part time, with herd sizes ranging from as large as 20 cows to as small as 3 or 4. All milk is grass and hay fed, no silage or corn is used in Sibratsgfäll. The head cheesemaker Max has been making Bergkäse for 45 years. 

This is a hard cheese with a smooth texture, similar to that of Gruyere. It has a savory, nutty flavor that is the perfect compliment to a nice German beer.
