Top Tier: Red Hawk
This triple-cream, washed-rind, fully-flavored cheese from Cowgirl Creamery is slightly funky and deliciously creamy. Red Hawk features a signature sunset red-orange rind that make it a stand out.
Second Tier: Bayley Hazen
Bayley Hazen Blue is from the Cellars at Jasper Hill Farm has a fudge-like texture, toasted-nut sweetness, and anise spice character. The paste is dense and creamy, with well-distributed blue veins. The usual peppery character of a blue cheese is subdued, giving way to the grassy, nutty flavors in the milk.
Third Tier: Humboldt Fog
