Chällerhocker is an international sensation from the mind of Walter Räss. Walter began his cheese career making Appenzeller (which is a partially skim milk cheese). However, when his brother imported Jersey cows, celebrated for their stellar fat content, he decided to take a risk. Walter’s new cheese would use full fat milk for a fuller flavor, and be cultured using an indigenous yogurt starter prepared by his wife Annalise. The rest, as they say, is history. 

Chällerhocker translates to “cellar dweller” or “sitting in the cellar”, referencing the minimum age time of 12 months. Each wheel is printed with a child peaking between the wheels to see if they’re ready. There’s a debate in the cheese world over whether the child is charming or haunting.

Haunted children aside, Chällerhocker’s flavor is incredible. Roasted peanuts, caramelized onions, and brown butter. Robust and rich, Chällerhocker is ideal for the fall and winter months. It’s versatile enough to be served on cheese boards or melted into fondue or over burgers.
