Castelbelbo is a soft, creamy cheese made from cow's milk, sheep's milk and goat's milk. Castelbelbo cheese is produced by Caseificio dell’Alta Langa in the Piedmonte region of Italy. It has an edible white rind, and a white colored paste, which matures into a straw yellow color. Castelbelbo is an aromatic cheese with a milky flavor and hints of flowers and cut grass.
Caseificio dell’Alta Langa is located in Bosia, a little village of Alta Langa area, in the Piemontese hills. They still produce their cheeses according to regional tradition and practices from small batches of milk collected, to produce small mixed milk cheeses – an iconic example of the “langarola” tradition.
