Brie is called the “queen’s cheese” for a reason. Originating in the historic territory of Brie, this cheese was a favorite of the French court and has been seen on the royal dinner table since the reign of Charlemagne. 

Brie du Pommier is one of the most authentic examples of brie you can get in the United States. Due to FDA regulations, Americans have limited access to certain traditional French soft cheeses, but master affineur Hervé Mons has developed a technique to capture the aromatic profile of AOC Brie while still abiding by US pasteurization laws. Milk is sourced from Normande cows, known for their exquisite quality, and the cheese is ripened using traditional cultures. 

Brie du Pommier is vegetal and earthy, with notes of roasted broccoli, cauliflower and mushrooms. Robust and savory, the inner paste should be squidgy and shmearable. 

The applications for Brie du Pommier are endless. It is a standout on any cheeseboard, but is excellent for culinary applications as well. Tuck into puff pastry cups with cranberry preserve and rosemary, or keep it simple as the French do, and load it onto a crusty baguette with butter and ham. 

Sold By: Whole or half wheel. A whole wheel is 8 inches in diameter and weighs approximately 2.2 pounds.
