Using only pasture-raised milk, Willi Lehner at Bleu Mont Dairy in Wisconsin ages his Cheddar for between one and two years in a real cave carved in the hillside. He makes a cloth-bound, English style cheddar that boasts nutty and caramel notes with the occasional crystalline crunch, with an earthy finish. This cheddar is a drier, crumbly variation that breaks apart into perfect bite-size pieces when opened.
