A soft and creamy blue cheese from the Auvergne region of France, aged by famed affineur Herve Mons. It has a nice balance of tart and salty and is delicious in salad dressings, with chicory, nuts or raw mushrooms. It is also fabulous mixed with hot, fresh pasta. Smear some on a good baguette and pair it with a sweet wine and you have the perfect picnic.
