Blaublüter translates to the "blue bleeder" in German. Blaublüter was first sold at the Kaltenberg Knights Tourney in Bavaria, earning its rather hardcore name. The cheese comes from Bio- Schaukäserei Wiggensbach, which is a 100% organic dairy co-op that works with 16 small family farms. The dairy is completely solar powered, and home to one of the largest aging caves in Germany ( capable of aging 30,000 wheels!).
Blaublüter starts as a double cream, washed rind cheese before being inoculated with blue mold. The resulting flavor is quite savory and funky, with notes of barnyard musk and sweet hay. This is your blue lover's blue, not for the faint of heart, but well worth it for the in depth cheese enthusiast.
