Aux Arcs
About this item
Pronounced "oh-zark" this cheese is named after the Ozark mountains, which run through Missouri, Arkansas, Oklahoma and Kansas. Historically cheeses were named for the region or town they came from. Since Aux Arcs is made in Weston Missouri, the name fits perfectly.
Aux Arcs is a firm table cheese - made from a blend of sheep and cow's milk. Leave it out and let the delicate flavors emerge: those of fresh milk and tangy forage. The cheese is only made during Summer and Fall when the animals are nibbling fresh grass. Aged a minimum of 2 months, it's a great snacking, cooking, or do-anything with, cheese.
