Prepared and filleted with care, one by one, Ortiz Anchovies are caught during the spring and are canned fresh to maintain all their flavor. They mature in barrels with salt for a minimum period of 6-months. Once matured, they are placed in olive oil and filleted by hand one by one or salted. The Anchovy of the species Engraulis encrasicholus is the most appreciated in the world. Thanks to this careful traditional, we get an anchovy with a compact meat and an intense flavor.
