The mountainous communities of Switzerland have been producing and perfecting Gruyère for over 800 years. In that time, the Swiss have cracked the code to a cheese with global appeal, while still retaining artisan quality and cultural identity. Fresh raw milk is sourced from local herds every morning and afternoon. Herd sizes are kept small to maximize animal health, and the cows graze in mountain pastures to produce stellar milk.
This 18-month Gruyère is made entirely from grass-fed raw milk (no silage). Brothy and complex, with a light crystallization. With notes of roasted hazelnuts, cooked cream, baked honey ham, and vanilla. The complexity makes it ideal for pairing both sweet and savory accoutrements.
