Cheesemaking comes back to life in the springtime! After surviving a long winter on hard aged cheeses, ancestral cheesemakers would finally have enough milk to start making fresh, soft cheeses. Fresh cheese is cheese in its purest form: curds separated from whey. These cheeses are the backbone of everyday kitchen fare: ricotta, feta, chevre, fromage blanc, cottage cheese, paneer, queso fresco, and more.
But while they may be the simplest to make, they are tricky to make well. With no aging time or fancy techniques to hide behind, fresh cheeses are the best litmus test for milk quality. Grazing pastures, animal health, and even weather patterns can make the difference between a blah fresh cheese and a blissful one.
This class will feature a flight of 5 fresh cheeses, with a wine pairing for each.

Tickets Required:
You must have a pre-paid ticket to attend cheese class. We do not accept last minute additions and walk-ins, as we plan seating and food and beverage amounts according to our reservation numbers.
